Title: Zucchini Bread 4

Yield: 2 Loaves

1/2cOil
1cSugar
2 Eggs
1cGrated unpeeled zucchini
1 1/2cFlour
1 1/2tsGround cinnamon
3/4tsBaking soda
1/4tsBaking powder

Blend oil with sugar. Beat eggs into mixture one at a time. Fold zucchini into egg mixture. Sift flour with cinnamon, soda and baking powder. Gradually add flour mixture to zucchini mixture. Mix well. Pour batter into 2 greased 8- x 4-inch loaf pans. Bake at 325F 1 hour.

Makes 2 loaves
